Vegetable Quiche

Crispy pastry crust with a fluffy creamy filling.

Ingredients

  • 4 1/2 ounces Margarine
  • 2 cups Plain Flour
  • 1 teaspoon Sugar
  • 4 tablespoons Cold water ( you may not use all of it)
  • 2 Onions diced ( I used red)
  • 3 Eggs
  • 400 millilitres Milk
  • 1 teaspoon Salt
  • 1 teaspoon Chilli powder
  • 1/4 teaspoon Black pepper
  • 1 teaspoon Cumin powder
  • Broccoli
  • 1 Carrot finely chopped
  • 5 String beans finely chopped
  • 1 Tomato finely sliced to decorate
  • 2 tablespoons Oil
  • pinch Nutmeg

Instructions

  1. Make the pastry by rubbing in margarine to the flour and until it resembles breadcrumbs.
  2. Add one tablespoon of cold water at a time and mix with a palette knife or suitable utensil until mixture forms a dough. Cover and rest in the fridge for 10 Minutes.
  3. Meanwhile put oil, carrots and onions in a pan and cook for 5 minutes until soften add sugar, chilli and cumin and stir. Leave aside
  4. Cut the broccoli into small florets. Place the beans and broccoli in a colander and pour boiling water over to blanch them,
  5. Divide the dough into 5 portions. Roll each pastry and line a flan tin. Leave to rest in fridge. You can make one large quiche by rolling out dough and lining the pastry in a large flan dish.
  6. Line the base of the pastry with grease proof paper or foil and fill with baking beans.
  7. Bake for 10 minutes. Remove beans and foil and bake for another 10 minutes.
  8. Divide the onion and carrot, equally into the five dishes, Cover the onions with the broccoli and beans.
  9. Beat the eggs and milk season with salt, pepper and nutmeg and pour over the vegetables.
  10. Bake for 30 to 40 minutes at 180
