Ingredients
- 4 1/2 ounces Margarine
- 2 cups Plain Flour
- 1 teaspoon Sugar
- 4 tablespoons Cold water ( you may not use all of it)
- 2 Onions diced ( I used red)
- 3 Eggs
- 400 millilitres Milk
- 1 teaspoon Salt
- 1 teaspoon Chilli powder
- 1/4 teaspoon Black pepper
- 1 teaspoon Cumin powder
- Broccoli
- 1 Carrot finely chopped
- 5 String beans finely chopped
- 1 Tomato finely sliced to decorate
- 2 tablespoons Oil
- pinch Nutmeg
Instructions
- Make the pastry by rubbing in margarine to the flour and until it resembles breadcrumbs.
- Add one tablespoon of cold water at a time and mix with a palette knife or suitable utensil until mixture forms a dough. Cover and rest in the fridge for 10 Minutes.
- Meanwhile put oil, carrots and onions in a pan and cook for 5 minutes until soften add sugar, chilli and cumin and stir. Leave aside
- Cut the broccoli into small florets. Place the beans and broccoli in a colander and pour boiling water over to blanch them,
- Divide the dough into 5 portions. Roll each pastry and line a flan tin. Leave to rest in fridge. You can make one large quiche by rolling out dough and lining the pastry in a large flan dish.
- Line the base of the pastry with grease proof paper or foil and fill with baking beans.
- Bake for 10 minutes. Remove beans and foil and bake for another 10 minutes.
- Divide the onion and carrot, equally into the five dishes, Cover the onions with the broccoli and beans.
- Beat the eggs and milk season with salt, pepper and nutmeg and pour over the vegetables.
- Bake for 30 to 40 minutes at 180
