Ingredients
- 458 grams Chillie mixture of red and green
- 1/2 cup Brown sugar
- 2 teaspoons Salt
- 1 Red pepper
- 2 Bulbs of garlic
- 4 Green chilli for heat
- 1/2 cup Vinegar (distilled white)
Instructions
- Remove ends of chillies cut in half and remove seeds. Chop the chilli and pepper. (wear a pair of gloves if you need to)
- Rough chop the peppers and peel the garlic.
- Add the chilli, garlic, peppers, salt, sugar and the green chilli into a blender and blend the mixture course.
- Pour the mixture into a jar and leave for 7 to 10 days.
- After 10 days pour the mixture back into the blender add the vinegar and blend till fine.
- Place a sieve over a cooking pot and strain the mixture. The liquid should fall into the pot leaving bits in the sieve.
- Discard the mixture you have in the sieve.
- Cook the sriircha over low heat until the mixture thickens.
- Let the sriracha cool completely and bottle, ready for use.
