This is a delicious sandwich filler especially for children who don’t like spinach. You can omit the cheese if you are health conscious or add lots of cheese if you are introducing it to children.

Ingredients
- 2 Onion
- 3 Eggs
- 1/4 teaspoon Black pepper
- 1/4 teaspoon Salt
- 1 teaspoon Cumin
- 1 teaspoon Chilli Powder
- 50 grams Cheese (grated)
- 2 tablespoons Oil
- 1 tablespoon Butter
- 300 grams Packet of washed spinach
Instructions
- Peel and finely dice onions.
- Put butter and onion into a pan and cook until slightly softened about 2/3 minutes.
- Rough chop handfuls of spinach on a chopping board until.
- Remove onions from heat and add chopped spinach, salt, chilli powder, cumin and black pepper.
- Keep stirring the spinach and you will see it begin to wilt.
- This process can be made in advance and used when needed.
- Add eggs to this mixture and mix well. Add grated cheese and mix until combined.
- Heat up 2 20inch frying pans. Add 2 tablespoons of oil in each frying pan. Divide the mixture between two pans.
- Cook on medium heat until the omelette firms and the bottom turns golden brown. You can flip over to cook top side or cover while to cook like frittata.
