Veggie Bean Burger

Ingredients

  • 2 cups frozen sweet corn
  • 2 cups frozen broad beans
  • 3 small red onions (you can use 1 large one)
  • 1 can red kidney beans
  • 1 can fava beans
  • 1 teaspoon Salt
  • 1 teaspoon chillie powder
  • 2 teaspoons cumin powder
  • 3 wiz 3 slices of bread in a blender to form breadcrumbs
  • 1 beaten egg
  • 3/4 cup Flour (seasoned with salt and pepper)
  • 1 teaspoon paprika
  • 1 cup rice (i had leftover rice cooked earlier in the day) You can use 2 tbsp of flour for binding
  • 1 teaspoon black pepper
  • 2 cloves of garlic grated

Instructions

  1. Rip the slices of bread into small pieces and place in a food processor or hand blender and process until it forms into breadcrumbs.
  2. Add one cup in a large bowl and empty the rest into a smaller bowl for coating your burgers.
  3. Wash the kidney beans and drain place it into the food processor and using the pulse action blend into a course mixture. Empty into large bowl along with the breadcrumbs.
  4. Next wash and drain the fava beans and place these too place into the food processor and blend into a course mixture and empty into the large bowl.
  5. Add the rice and blend add to the bean mixture.
  6. To the beans add all the spices salt, cumin, chillie powder, paprika, black pepper and garlic. mix well.
  7. Next put the frozen beans in the food processor and blend until you have a course mixture, add this to the beans.
  8. Finally course blend the frozen sweetcorn and add to the bowl. Combine the mix burger mixture well.
  9. Measure 2/3 cups of the burger mixture and form a pattie, if you have a burger press it is best to use this. Coat the burger in the seasoned flour and brush with the beaten egg and coat with breadcrumbs.
  10. Add a tablespoon of oil in a frying pan and cook gently on low heat. Cook for 10 minutes and gently turn over to cook the other side. It is best to cook these slowly on low heat to avoid breaking the burgers.
  11. Serve in a bun with lettuce, slices of tomato, mayo, and ketchup etc.
